Energy bites
Our energy bites are all made from mostly organic ingredients. They are also gluten free and raw. Provided that they are packed in an airtight container, they can be stored in the freezer for a month, if needed. Some people even like to eat them frozen!
The the only ingredients that aren't organic are the raspberries from Debbie and Alan Clarke (Willow Tree Farm in Armstrong). Their berries are naturally grown without pesticides, herbicides or synthetic chemical fertilizer, but most of all, their raspberries are delicious!

Dutch pastry
We're still working on the best vegan alternative for our Dutch pastry. For now all ingredients are organic, except for the butter replacement. We use organic almond milk instead of cow milk and (non-organic) vegetable margarine instead of regular butter for our speculaas and gevulde koeken. On request we can also make a vegan variety of coconut macaroons and gevulde speculaas (almond paste filled speculaas). Almond paste will be made with organic flax seed instead of egg white. |
Aquafaba
By incident we ran into this great invention: using chickpea 'water' as an egg replacement! We've used it for our coconut macaroons and it tastes delicious! It's called aquafaba, meaning water-beans. You can make your own aquafaba (see video), but since we're quite lazy we bought a can of unsalted chickpeas and used the water.
The video below is very instructive and also quite funny!
